Gingerbread Energy Bites

These gingerbread flavoured energy bites make a delicious and healthy snack for kids, perfect for the festive period! They’re so easy to make and require no cooking or baking.

Ingredients:

  • 100g oats
  • 100g peanut butter
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 10g chocolate chips

 

Directions:

  1. Add all the ingredients to a large bowl and mix well with a spoon.
  2. Roll into 12 balls.
  3. Melt the chocolate chips in the microwave and drizzle the chocolate on top of the bites.
  4. Refrigerate for 30 minutes and serve.
  5. These bites will keep in the fridge for up to 5 days or in the freezer for 1 month.
