Packed with vitamins and fibre, they make a brilliant lunchbox addition. They will keep in the fridge for a couple of days and can be frozen too.
Ingredients:
- 1 mashed banana
- 100g grated carrot
- 100g grated courgette
- 40g baby spinach
- 60g melted butter
- 50ml milk
- 1 medium egg
- 70g honey
- 150g self raising flour
- 25g cocoa powder
Directions:
- Add the banana, carrot, courgette, spinach, butter, milk, egg and honey to a blender and blitz under smooth.
- Pour the mixture into a large bowl and mix in the flour and cocoa powder.
- Transfer to a lined baking tin and bake at 180c for 20 minutes.
- Leave to cool before cutting into 16 squares.
