Mini Banana Breads

Mini Banana Breads

These mini banana breads are brilliant to batch make for kids' lunchboxes or even for an after school snack.

I used our Square Mini Baking Tin to make them and packed them into our Pick Box Snack

I love this recipe because:

✅ They feel like a proper treat but are low in sugar.

✅ They are really easy to make with a few simple ingredients.

✅ They are brilliant for batch making and freezing.

Ingredients:

  • 1 banana, mashed
  • 1 medium egg
  • 150ml milk
  • 50g melted butter
  • 2 tbsp honey
  • 130g self raising flour
  • 40g chocolate chips
  • spray oil

Directions:

      1. Preheat the oven to 180c fan.
      2. Add the banana, egg, milk, melted butter and honey to a large bowl and mix well.
      3. Add the flour and half the chocolate chips and mix again.
      4. Grease the tin with spray oil or a little melted butter.
      5. Add the mixture to the tin holes and then top with the remaining chocolate chips.
      6. Bake in the oven for 18-20 minutes.
      7. Allow to cool for a few minutes in the tin before removing.

These Mini Banana Breads will keep in an airtight tin for up to 3 days. They can also be frozen for 2 months. Defrost at room temperature in a couple of hours.
