Mini Flapjack Bites

Nut free and suitable for school, these Mini Flapjack Bites make a really great high fibre and filling snack for kids.

I used our Round Mini Baking Tin to make them.

I love this recipe because:

✅ They are nut free so brilliant for lunchboxes.

✅ They are the perfect portion size for a snack for kids.

✅ They are brilliant for batch making and freezing.

Ingredients:

  • spray oil or melted butter for greasing.
  • 70g butter, melted
  • 70g honey
  • 180g oats
  • 50g mixed seeds
  • 20g sugar 

Directions:

      1. Preheat the oven to 180c fan.
      2. Grease the mini muffin tin with some oil or melted butter.
      3. Add the melted butter, honey, oats, mixed seeds and sugar to a large bowl and mix well with a spoon.
      4. Divide the mixture between the 12 muffin holes and push the top down with a spoon to make them as compact as possible.
      5. Bake in the oven for 15 minutes.
      6. Allow the flapjack bites to cool before removing from the tin. This ensures they keep their shape.

      These Flapjack Bites will keep in an airtight tin for up to 3 days. They can also be frozen for 2 months. Defrost at room temperature in a couple of hours.
