Mini Granola Bar Bites

These mini granola bar bites are a brilliant wholegrain snack for kids. Made with just a few simple ingredients, they require no cooking at all. Super easy! I packed them into our Snackle Box. Great for filling snacks on days out.

I love this recipe because:

✅ They are really easy to make - just six ingredients and no baking required.

✅ The recipe makes 36 bites, brilliant for batch making snacks.

✅ The keep in the fridge for 5 days or even longer if you store them in the freezer.

Ingredients:

  • 150g oats
  • 35g rice krispies
  • 3 tbsp mixed seeds
  • 100g peanut butter
  • 40g unsalted butter
  • 100g honey

Directions:

  1. Add the oats, rice krispies and seeds to a large bowl and mix with a spoon.
  2. Add the peanut butter, butter and honey to a saucepan. Melt over a low heat for a minute or two.
  3. Pour this melted mixture into the bowl and mix well until everything is combined.
  4. Line an 8×8 inch baking dish with parchment paper.
  5. Add the mixture to the dish and press down with the back of a spoon to make it as compact as possible.
  6. Freeze for 1 hour.
  7. Cut into 36 mini pieces.

Keep these granola bites in an airtight container in the fridge for up to 5 days. They can also be frozen for 1 month.
