We’re almost half way through the summer holidays and if you’re running out of easy lunch ideas for the kids then you need to try these quick and simple Pesto Croissants.
Take a small croissant, cut it in half and spread about a tablespoon of pesto on both sides of the inside. I used red pesto but green pesto will work just as well too.
Top that with some grated mozzarella cheese and pop the croissant open underneath the grill. Cook for 1-2 minutes until the cheese has melted.
Serve with chopped fruits and veggies for something a little different for lunch!
